Nope! At least right now, there is no such thing as a 64bit client for outlook -- there is only a 32bit client, and you install the same version on your host machine whether you're running 32bit or 64bit windows. So feel free to install 64bit or 32bit on your server, and the clients should work fine.

That's a good idea -- I did indeed use the default SQL 2005 Express. Next time I'll try messing with compatibility troubleshooting and SQL 2008 express. I also suspect Windows 7 RC1 x86 users will have more success since I've heard that the offline client barely worked with Vista x64, but works ok with Vista x86. I've heard these reports second hand, so take them with a grain of salt.

You didn't specify if the Outlook offline client was installed with the default SQL 2005 Express or if you configured it with the newer SQL 2008 Express.  Perhaps you'll have more luck with the 2008 version?
